I was recently asked to try the New and Improved PAM® formula. PAM is a product I use all the time and wondered how the new formula would compare in this King Ranch Chicken Casserole.

It can be so frustrating to work on making a delicious dish only to have it stick to the pan. Not only does this make it hard to serve, but you also lose some of the meal to the pan and end up having to soak and scrub for clean-up.

As a food blogger, I need every meal be picture-perfect. Plus, I would love to have more time to enjoy my food and spend less time soaking, scrubbing, and cleaning in the kitchen. So, I picked a gooey, cheesy, stick-to-the-pan casserole to put the new formula to the test.

I made a King Ranch Chicken Casserole. This consists of layers of corn tortillas, creamy chicken mixture, and cheese (the ultimate baked on culprit). Armed with the new PAM, I went into battle.

The casserole itself was a family pleaser, and the new PAM left me a winner with hardly any clean up. There was no need for soaking or scrubbing. No casserole left sticking to the pan. In fact, there is hardly anything left in the pan.

Begin by preheating your oven to 325°F and preparing your baking dish. To do this, spray a 9×13-inch dish with non-stick cooking spray, making sure to coat it evenly. This crucial step ensures that your casserole won’t stick to the dish, making both serving and cleanup much easier.Set it aside for later use.

Next, move on to preparing the filling. In a large mixing bowl, combine the canned soups and Ro*Tel tomatoes. Stir the ingredients until they completely blend into a smooth mixture. After that, add the chicken and sliced green onions to the bowl. Mix thoroughly so the ingredients are evenly distributed, creating a flavorful filling.

Once your filling is ready, it’s time to assemble the casserole. Begin by tearing half of the tortillas into bite-sized pieces and spreading them across the bottom of the prepared baking dish. This forms the base layer of your casserole. Afterward, evenly distribute about 2 cups of the chicken mixture over the tortilla pieces, making sure to spread it out to cover the entire layer. Then, sprinkle 3/4 cup of shredded cheese over the chicken mixture, making sure each layer balances with flavor and texture.

Continue assembling by repeating the layering process two more times. First, tear and layer the remaining tortillas, followed by spreading the chicken mixture evenly, and finally topping it with shredded cheese. These layers create a wonderfully cheesy, hearty casserole that is full of flavor.

Finally, place the baking dish into your preheated oven and bake for 40 minutes, or until the casserole is hot and bubbly. As it bakes, the cheese will melt beautifully, creating a golden, slightly crisp topping. Once it’s done, let it cool slightly before you serve. This easy-to-make dish is a guaranteed crowd-pleaser, perfect for feeding 6-8 people. Enjoy every bite of this creamy, cheesy, and satisfying casserole!

Can I use a different type of meat?
Absolutely! While shredded chicken is traditional, you can use turkey, ground beef, or even rotisserie chicken for convenience. Just ensure the meat is fully cooked before adding it to the recipe.

Can I make this casserole ahead of time?
Yes! You can assemble the casserole up to a day in advance. Cover it tightly with plastic wrap or foil and fridge. When ready to bake, let it sit at room temperature for about 15-20 minutes before placing it in the oven.

Can I make this recipe spicy?
Definitely! If you like heat, opt for the spicy version of Ro*Tel tomatoes, or add some diced jalapeños, chili powder, or a sprinkle of cayenne pepper to the chicken mixture.

Can I use flour or corn tortillas?
This recipe works best with corn tortillas, as they hold up better and add authentic flavor. However, you can experiment with flour tortillas if you prefer a softer texture.

What toppings pair well with this dish?
Top with chopped fresh cilantro, diced avocado, sour cream, or a squeeze of lime juice to enhance the flavors even more. These toppings add a fresh and vibrant contrast to the creamy casserole.

Ingredients
  

  • PAM Original No-Stick Cooking Spray
  • 10 ¾ oz can condensed cream of chicken soup
  • 10 ¾ oz can condensed cream of mushroom soup
  • 10 oz can Ro*Tel Original diced tomatoes and green chilies (Next time I will use mild, the original was too hot for my youngest kiddos)
  • 2 cups cooked chicken diced
  • ¼ cup diced green onion plus extra for garnish if desired
  • 12 corn tortillas 6-inch size
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 325 degrees
  • Spray a 9 x 13 inch baking dish with PAM No-Stick cooking spray and set aside.
  • In a large bowl, combine the soups and Ro*Tel. Stir until well blended.
  • Add chicken and green onion to the mixture and stir until well combined.
  • Take half of the tortillas and tear into bite sized pieces and place in the bottom of the prepared baking dish.
  • Place about 2 cups of the chicken mixture evenly over the tortillas pieces followed by 3/4 cup of the shredded cheese.Repeat layer two more times.
  • Bake at 325 for 40 minutes or until hot and bubbly.

  2. I think your math is wrong. You have two cups of shredded cheese but you are using 3/4 of a cup per layer. For three layers, you should be using 2/3 of a cup of cheese.

  4. I will not bake anything without PAM SPRAY!! I especially love it on my pan of brownies and when I make meatloaf. Makes for such an easy cleanup for my other half(since I cooked)hehe.

  7. I use Pam a lot for all my baking/cooking. My favorite dish to make with PAM is Ham, onion & Mushroom Omelets. It tastes good and I can flip it easily without breaking it and not sticking to the pan.

  8. I love making Chef Boyardee Pizza kits and it is IMPOSSIBLE to do without Pam! LOL I use it to grease my pizza pans as well as my hands to spread the dough!!

  9. All I know is I get so frustrated when I run out of PAM because I know my recipes will stick to the pan and not turn out how I would like them to. My favorite recipe to use PAM for is a delicious sausage, egg, breakfast casserole! Yum!

  11. I use Pam for everything but the most important use is for when i make my homemade brownies with syrup in the middle.they turn out perfect every time. The generic store brands just dont so as well as PAM so it is my only choice

  13. I LOVE to cook with PAM. I use it when I bake muffins. And we LOVE muffins at our house. When my Mom bakes with my son they are called Nana’s Magic Muffins no matter what flavor they are!

I recently bought a store-brand super cheap one. It just doesn’t work as well. Definitely buying some more of the real stuff at Costco with the coupon this month!!

  29. I can’t survive without Pam. I use it for EVERYTHING! If you spray your plastic containers before putting a red sauce in, your containers don’t become discolored. YAY!!

  30. I have used Pam for years on everything…bundt pans for Monkey Break, anything I prepare in the crockpot has a spray of PAM first and also I use it for every baking need. I even use it for all my grandson Aleksei’s cooking in my saute pans…he is allergic to olive oil and dairy and PAM is perfect for his cooking!!!

  31. I use Pam for grilling to help my non stick grates to really be non stick. Also helps to reduce flare ups since I don’t need to marinate with oils.

  34. I use PAM for EVERYTHING!!! It keeps everything from sticking to the pan. Most recently I learned that if you spray a little on your hair brush before you use it, it will control fly away/static hair !!!! Now that’s a universal product!

  35. I use PAM in this recipe. Not only does it keep the chicken from sticking, but you also spray the tops of the chicken before baking to keep the chicken extra moist and give the topping a crunch without the added fat of frying! YUM!!!

  36. Just this morning I had to scrub a baking dish from meatloaf that was sprayed with a bargain nonstick spray. There were chunks left behind. I would love to give that recipe another shot with this new and improved Pam.

  39. I use regular Pam, but I LOVE using Pam for Baking when I make muffins or cupcakes. They come out so perfectly that I don’t have to mess with the annoying liners.
