Baked Zucchini Fries

Zucchini is taking the form of fries today.  Even better is that they are baked.  I loved the idea of using a packet of Shake and Bake as part of the coating.  I used the pork variety.  These were quite yummy.

Baked Zucchini Fries

  • 3 small zucchini (around 1 lb.)
  • 1/4 cup Grated Parmesan Cheese
  • 1 packet Shake & Bake Coating Mix
  • salt, to taste
  • 2 eggs, lightly beaten
  • 1/4 cup water
  • 1/2 cup all-purpose flour

  1. Heat oven to 450ºF.  Trim the zucchini and cut each in half width wise. Then cut each half into 1/4 inch sticks.
  2. In a bowl, combine the Parmesan cheese, coating mix, and salt.
  3. In another bowl, whisk together the egg and water together. Place flour in another bowl.
  4. Coat zucchini with flour. Then place zucchini in the egg mixture followed by the parmesan cheese/coating mix.
  5. Place on a baking sheet that has been sprayed with cooking spray.
  6. Bake at 450 for 12 to 13 min. or until golden brown, rotate the baking sheet  180 degrees halfway through baking for even cooking. Serve with ranch dressing or marinara sauce for dipping.

  • I make the fries every summer but use a packet of dry italian dressing seasoning and mix it with breadcrumbs in place of the shake and bake. I’m going to try it with shake and bake next time. Sounds really good.

  • I saw a recipe for zucchini chips too, but I think I’ll start with this one. The fries sound much more fun!

    @Heather: I have some baskets like that, which I found at TJ Maxx last summer. They were selling red and yellow baskets and are fabulous!! The kids love getting to use them!!

  • Those look amazing. I have done the zucchini fried chips, but never thought to do sticks “fries”. Definitely going to try these next sloppy joe night we have.

  • I love that this uses the shake and bake, since it not your typical breading seen in most recipes. I’ve done zucchini ‘chips’ before and used crushed pretzels and they were fabulous!

    Oh and where did you get that red basket in your picture? I have been looking for some baskets like that everywhere and can’t find any!
