We are Mexican food fanatics at our house. My family is always happy with any Mexican dish I make. I was thrilled when I was contacted by Tortilla Land to try their fresh uncooked handmade-style flour tortillas. I have tried other uncooked brands before and was excited to give theirs a try. The uncooked variety is the closest to homemade as you can get without actually preparing and pressing the dough yourself! They even have a video clip on their site showing you how easy they are to cook on your stove top.
The also challenged me to come up with a grilling recipe utilizing the tortillas for Memorial weekend. I decided on making grilled chicken tacos using the citrus and mustard grilled chicken recipe. I also try cooking the tortilla directly on the grilled. They turned out perfect. They don’t get as brown as if you cooked them on the stove top but taste just as cook. I actually kind of prefer them cooked on the grill. The grilled chicken along with the fresh guacamole and pico de gallo give you a nice fresh flavor perfect to kick off Summer.
Tortilla Land also has uncooked corn and multi-grain tortillas. I can’t wait to give them a try too. I especially want to try my grilled chicken breast tostadas using the corn shells!
Grilled Chicken Tacos
4 grilled citrus and mustard chicken breasts
While you grill the chicken, cook the tortillas on the grill over medium heat. They will get cooked a slightly brown. When tortillas and chicken are cooked, cut chicken into strips. To build your taco, place strips of the grilled chicken on the tortillas followed by shredded cheese, guacamole, and pico de gallo.
