Pina Colada Fruit Dip


First off if you printed the focaccia sandwich recipe from yesterday, reprint it!  I have two readers try it yesterday and I realized there was a typo in the ingredients.  It should have been 1 cup of warm water not 2.  I had taken my easy peasant bread recipe and adapted it to make the focaccia, in doing so I needed to half the ingredients.  I missed changing the amount of water.  I am so sorry for this mistake, but I am human.  I just don’t want anyone else having issues with the recipe.

Now on to today’s recipe.  We recently had some friends over for a bbq.  Part of my menu included some fresh fruit.  I wanted to whip together a dip but life had been crazy and I had not planned anything specific.  So I looked around my house to see what I could find and I ended up creating this yummy fruit dip with a tropical flair.  It was so yummy I had to share.

Pina Colada Fruit Dip

  • 1 (3.4 oz) pkg instant coconut cream pudding mix
  • 3/4 cup Cool Whip (I used the extra creamy kind)
  • 1 cup milk (I used skim)
  • 1 cup crushed pineapple, undrained

In a bowl, blend together the pudding mix, cool whip, and milk with a hand mixer for 2 minutes.  Fold in the pineapple.  Refrigerate for at least 30 minutes and serve with fresh fruit.

  • You didn’t say which pudding to use is it instant .

  • I make similar dips all the time and it works best if you mix up the pudding, milk and pineapple first and then fold in the cool whip – otherwise you over mix the coolwhip and it gets runny.

    • I also found this in Pinterest and couldn’t get it to thicken up. I thought maybe I did something wrong. Another response says to fold in the cool whip… I think I’ll try that next time (and there will be a next time- it was Delicious!!)
