Cake Mix Zucchini Bread

Here’s another zucchini recipe for you. I found this one on Recipezaar. Now, I liked the idea of this one, it called for a cake mix. Also, I really liked the way it turned out. I decided to do the cake mix zucchini bread with almond extract for a change. I thought it was delicious and of course my husband didn’t. He said to make it next time with vanilla extract. If you like almond extract though, I would highly recommend it.

I know my oldest son would have loved it with peanut butter chips, but since I was using almond extract, I stuck with the semi sweet chocolate chips. I all chose a milk chocolate cake mix and used 2 cups of zucchini. On thing that I did do differently with this recipe was put it all in one loaf pan. The recipe says it makes 2 loaves, but after I started to add the batter to the pan it look like too little batter. So, I put it all in one loaf pan and cooked it for 60 minutes. I made a really good sized loaf.
If you go the do the muffin option, I am also wondering if it would really make 24 muffins.
It may be more like 12-18 muffins. One other tip, make sure to toss your chocolate chips in a little flour before adding them to the batter. This help keep them from sinking to the bottom of the bread. This recipe was delicious and will be added to my tried and true file. And just so you know, I am hoping to have a savory zucchini recipe for you tomorrow. I figure I gotta throw ONE in there.

- EGGS
- ZUCCHINI
- VANILLA (OPTIONAL) OR ALMOND EXTRACT (OPTIONAL)
- BUTTER
- CHOCOLATE CHIPS (OPTIONAL) OR PEANUT BUTTER CHIP, AND (OPTIONAL) OR CHOPPED NUTS (OPTIONAL)
- CHOCOLATE CAKE MIX
- SUGAR

Cake Mix Zucchini Bread

Ingredients
- 3 eggs
- 1 ½ to 2 cups shredded zucchini
- 1 tsp vanilla optional or almond extract (optional)
- 1 Tbsp butter melted
- ½ cup chocolate chips optional or peanut butter chip, and (optional) or chopped nuts (optional)
- 1 18 1/4 ounce box chocolate cake mix (any can be used)
- ½ cup sugar
Instructions
- In one bowl mix all ingredients. Will have some lumps and that is ok.
- Pour into greased and 2 floured bread loaf pans or 1 loaf pan and 12 muffin cups (lined).
- Cook for 45 minutes at 350°F. (Since I did mine in 1 loaf I cooked it for 60 min) Muffins 25 minutes at 350°F.
