Garlic Red Potatoes

I am always on the look out for a delicious and easy side dish.  I found this yummy and simple potato dish from Chelsea over at Mmm Cafe.  Let me just say that the family was all saying Mmm as they ate these potatoes.  They were easy to put together and I loved the flavor.  They were perfect for this garlic lovin’ family.  I did change the recipe slightly and used a combination of yukon gold potatoes and red potatoes.  I really loved the two kinds of potatoes together in this recipe.  It also made the dish look a little rustic.

Garlic Red Potatoes

  • 2 pounds red potatoes, quartered  (I use half red and half yukon gold potatoes)
  • 1/4 cup butter, melted
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 lemon, juiced
  • 1 tablespoon grated Parmesan cheese
  1. Preheat oven to 425 degrees F.
  2. Place potatoes in an 9 x 13 inch baking dish, lined with tin foil to make an easy cleanup.
  3. In a large bowl, combine melted butter, garlic, salt and lemon juice; add
  4. the potatoes and stir to coat.
  5. Pour potatoes into the baking dish and sprinkle Parmesan cheese over potatoes.
    Bake in preheated oven for 25-35 minutes.

  • Instead of butter you can always just use olive oil, that is what I always use. Just enough to cover everything. Also I make something similar but I put dill weed in it as well as the garlic. We also love lots of garlic taste so I usually put in garlic powder (not garlic salt) as well as the minced garlic to give it a stronger taste. I have never used parmesan but I will have to try it now. It sounds delicious!

  • These look yummy! Is there anyway to do the same flavors without using butter. I have a little guy who can’t have any dairy. I am not a great cook so any ideas would be helpful. 🙂

  • Another great and easy thing to do with red potatoes is cover them in olive oil and powdered ranch seasoning. It’s so simple and yummy. You cut them up however small you want, put them in a zip lock with oil and ranch seasoning, then shake! Then throw them in a pan to bake in the oven at 400 for about 30 minutes to an hour.

  • I love potatoes year round, but love fresh ones in the fall most of all!
