Grilled Chicken Cola Marinade

One of my good blogging friends, Jamie over at Jamie Cooks It Up, recently posted a chicken marinade recipe.  I have one that is similar. It uses Sprite or 7 Up in the marinade and is called Manti Turkey (or Chicken).  We love that recipe.  It also looks like I have never shared that recipe with you before, so the Manti Turkey recipe will soon be coming.   Jamie’s recipe had a few different ingredients in her recipe including Coke or Pepsi, balsamic vinegar, and lime juice.  After seeing it I knew I had to try it.  I love the flavor that the cola added.  This is yummy and easy.  Added it to my tried and true grilling recipes.  Thanks Jamie!

Grilled Chicken Cola Marinade

2  C (16 oz) Coke or Pepsi
1/3 C soy sauce
1 T minced garlic
1/2 C brown sugar
1 T balsamic vinegar
1 T lime juice
6 chicken breasts
1. Combine all ingredients but the chicken in a medium sized bowl. Stir to incorporate well.
2. Place chicken in a large gallon sized Ziploc bag. Pour marinade over the chicken. Seal tightly and store in the fridge for 4-24 hours (The longer the better in my book).
3. Discard marinade and grill until cooked through.

  • So you can use soda as a marinade, awesome. I’m not a big soda drinker and I had some Dr. Pepper left over that I wanted to get out of my fridge, so I dumped it in a bag with two leg quarters, guava, molasses, hot sauce, a drizzle of sesame oil, shook it up and left it in the fridge for 30 mins. Tried baking it, but it smelled so maddeningly good that I finished it on the Foreman grill.

  • I LOVE this recipe. I make it all the time and it never fails to please! I usually use cherry Dr. Pepper instead of Coke, because that is my dad’s favorite. It is delicious! Also, as a college kid without a grill, I tried broiling it in a pan…don’t do it. Even though I have non-stick pans and used lots of Pam, the marinade turned to syrup and I had a hard time keeping the chicken from becoming glued to the pan, not to mention a LOT of scrubbing after. Still tasted good though.

  • Marinating meat with cola is a great idea. I love the sweetness – I’ve already tried it with pork and it’s delicious.
