Marinated Burgers

When grilling season rolls around, I usually stick to marinated steaks and chicken—sometimes even shrimp. However, until recently, I had never considered marinating burgers. I always assumed ground beef didn’t need much beyond a sprinkle of seasoning. Turns out, I was missing out on something pretty spectacular. Just one hour in a flavorful marinade transforms those patties into next-level burgers with a rich, almost steak-like savoriness that makes them feel a little more gourmet without any extra fuss.

All it takes is a bit of planning ahead. Letting the patties soak in the marinade—even for just an hour—infuses them with bold, mouthwatering flavor from the inside out. It’s a simple step that brings a serious payoff at the grill, making the burgers juicier, more tender, and significantly more satisfying than your average backyard burger.

Now, let me tell you—my middle son is a burger guy. He orders one pretty much everywhere we go and takes his burger opinions very seriously. When he tried these marinated burgers for the first time, he declared it the best burger he’s ever had. That’s high praise coming from someone who’s tasted his fair share! Safe to say, this recipe has earned a permanent spot in our summer dinner rotation. The patties cook up with the perfect amount of juiciness and are absolutely packed with flavor—no extra toppings required (though they certainly don’t hurt!).

  • 80/20 GROUND BEEF
  • OLIVE OIL
  • BROWN SUGAR
  • GARLIC CLOVES
  • BALSAMIC VINEGAR
  • DRIED MUSTARD
  • FRSH GINGER
  • SOY SAUCE
  • SEASONED SALT OR YOUR FAVORITE STEAK SEASONING (I USE MCCORMICK MONTREAL STEAK SEASONING)
  • BLACK PEPPER
  • WORCESTERSHIRE SAUCE

Start by dividing the ground beef into 6 equal portions and gently shaping them into 5-inch wide round patties. Press a deep indentation into the middle of the patty—this helps them cook evenly and prevents puffing up on the grill. Arrange the patties in a single layer in a large, shallow dish. I use a glass baking dish.

In a separate bowl, whisk together all of the marinade ingredients until smooth and well combined. Pour the marinade over the burger patties, ensuring each one is nicely coated.

Cover the dish tightly with plastic wrap and refrigerate for at least 1 hour, or up to several hours for a deeper flavor. Be sure to flip the patties at least once while marinating to let the flavor soak in on both sides.

When you’re ready to grill, preheat your outdoor grill to 325–350 degrees F. To prevent sticking, oil the grates by dipping a folded paper towel in vegetable oil and using tongs to swipe it across the surface.

Place the patties on the hot grill and cook for about 7 minutes per side, or until the burgers are fully cooked through and reach an internal temperature of 160°F.

Let the burgers rest for 5 minutes before serving to lock in all those flavorful juices. Serve on split hamburger buns along with your favorite toppings and condiments. This recipe makes 6 deliciously juicy marinated burgers, perfect for your summer cookouts or family burger night!

Marinated Burgers

Why marinate burger patties instead of just seasoning them?
Marinating infuses the patties with flavor and moisture from the inside out, giving them a steak-like richness that dry seasoning alone can’t match.

How long should I marinate the burgers?
At least 1 hour is recommended, but you can marinate them for up to 8 hours. Just be sure to flip the patties at least once during that time for even flavor distribution.

Can I mix the marinade into the ground beef instead?
It’s best to pour the marinade over pre-formed patties. Mixing it directly into the meat can overwork the beef, making the burgers dense or tough.

What kind of ground beef should I use?
Don’t use lean ground beef. Use 80/20 ground beef for the juiciest results. The fat content helps keep the burgers moist and flavorful during grilling.

Do I need to let the patties come to room temperature before grilling?
Nope! In fact, keeping them cold helps them hold their shape better on the grill. Just pat them dry before cooking to get a good sear.

Can I freeze marinated burger patties?
Yes! After marinating, freeze them in a single layer until solid, then stack with parchment between each patty in a freezer-safe bag. Thaw in the fridge before grilling.

How do I keep the burgers from falling apart on the grill?
Handle the meat gently when forming patties, make a thumb print indentation in the center, and avoid flipping too often. A hot, oiled grill also helps prevent sticking.

What toppings go well with marinated burgers?
These burgers are flavorful enough to stand alone, but they’re also great with melty cheese, grilled onions, lettuce, tomato, bacon, pickles, ketchup, or even a smear of garlic aioli.
