A tradition at out house is breakfast in bed on Mother’s Day. It started years ago when my husband made breakfast in bed and decided to include my daughter.
My daughter has a genetic disorder called Turner Syndrome. With that, she is most likely not going to be able to have kids of her own. It has occurred, but it is very rare. So he decided to include her in that breakfast and celebrate the girls in his life.
Since then, my daughter has looked forward to it each year and will always remind him to make sure he does it. He would never let his little girl down, so it happens one way or another every year.
This waffle recipe would be perfect to serve mom on Mother’s Day. I like the blueberries in my waffles or pancakes rather than just on top. I love the nice warm pop that you get from the blueberries as you take a bite of the waffle or pancake. The fresh ones just don’t give you that same wonderful experience.
- 2 cups flour
- ½ cup cornstarch
- ½ tsp baking soda
- 1 tsp salt
- 1 tsp baking powder
- 2 cups buttermilk
- ⅔ cup canola oil
- 2 eggs
- 2 Tbsp sugar
- 2 tsp vanilla
- 1½ cups fresh blueberries, plus additional if desired for garnish
- In a large bowl, whisk together flour cornstarch, baking soda, salt, and baking powder.
- Add in buttermilk, oil, eggs, sugar and vanilla. Whisk together just until combined then fold in blueberries.
- Cook according to waffle maker instructions. Garnish with fresh blueberries if desired for serving.
