Fresh Berry Syrup

I love berries! I’ll take them any way I can get them but fresh is always best.

Berries have been on sale lately for some awesome prices. One of my local grocers had 6 oz of blueberries for 66 cents! They are also going to have 1 lb of strawberries on sale this weekend for 99 cents!

This syrup is the perfect syrup for fresh berries. The trick is to use part of the berries when cooking the syrup, then you add the remaining at the end. This allows them to keep their fresh form and flavor. A little orange zest is added to enhance that fresh berry flavor. I love to use the orange zest but you could also use lemon zest too.

This syrup is perfect to serve over cakes, waffles or pancakes along with a dollop of whipped cream. It is also excellent to serve over ice cream or cheesecake. The possibilities are endless with this.

Fresh Berry Syrup
  • ¼ cup sugar
  • 4 tsp cornstarch
  • dash of salt
  • ½ cup water
  • 2 cups mixed fresh berries (I used raspberries, blueberries, and strawberries)
  • 1 tsp butter
  • 1 tsp orange zest
  1. In a saucepan, combine the sugar, cornstarch, and salt. Whisk in water. Then stir in ¾ cup of the berries.
  2. Cook and stir over medium heat until thickened. Remove from heat. Add in the remaining berries and butter, stirring until butter is melted. Gently stir in orange zest.
