Lemon Brownies

Lemon week continues today with a recipe for lemon brownies. These are the exact same consistency and texture you would expect from a brownie, but with a light lemon color and flavor. These little morsels also get a light coating of a lemony glaze.

These brownies are a fun change from your usual chocolate brownies and make you think you’ve died and gone to lemon heaven. Surprise Mom with a pan of these tasty morsels for Mother’s Day. They will definitely brighten her day!

Lemon Brownies
  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/4 tsp salt
  • 1/2 cup butter softened
  • 2 eggs
  • zest from half a lemon
  • 1 Tbsp lemon juice
  • Glaze:
  • 1/2 cup powdered sugar
  • 1 Tbsp lemon juice
  1. Preheat oven to 350 degrees.
  2. In a bowl, whisk together flour, sugar, and salt. Beat in butter until blended.
  3. Add in eggs, lemon juice, and lemon zest. Beat until combined.
  4. Spread batter into a greased 9 x 9 inch pan.
  5. Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool and then spread with glaze.
  7. To make glaze, combine powdered sugar and juice together until well blended. Spread over cooled brownies. Makes 9 brownies.
