Lemon Brownies

Lemon week continues today with a recipe for lemon brownies. These are the exact same consistency and texture you would expect from a brownie, but with a light lemon color and flavor. These little morsels also get a light coating of a lemony glaze.
These brownies are a fun change from your usual chocolate brownies and make you think you’ve died and gone to lemon heaven. Surprise Mom with a pan of these tasty morsels for Mother’s Day. They will definitely brighten her day!


Lemon Brownies

Ingredients
- ¾ cup flour
- ¾ cup sugar
- ¼ tsp salt
- ½ cup butter softened
- 2 eggs
- zest from half a lemon
- 1 Tbsp lemon juice
Glaze:
- ½ cup powdered sugar
- 1 Tbsp lemon juice
Instructions
- Preheat oven to 350 degrees.
- In a bowl, whisk together flour, sugar, and salt. Beat in butter until blended.
- Add in eggs, lemon juice, and lemon zest. Beat until combined.
- Spread batter into a greased 9 x 9 inch pan.
- Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool and then spread with glaze.
- To make glaze, combine powdered sugar and juice together until well blended. Spread over cooled brownies. Makes 9 brownies.
