Lemon week continues today with a recipe for lemon brownies. These are the exact same consistency and texture you would expect from a brownie, but with a light lemon color and flavor. These little morsels also get a light coating of a lemony glaze.

These brownies are a fun change from your usual chocolate brownies and make you think you’ve died and gone to lemon heaven. Surprise Mom with a pan of these tasty morsels for Mother’s Day. They will definitely brighten her day!

Ingredients
  

  • ¾ cup flour
  • ¾ cup sugar
  • ¼ tsp salt
  • ½ cup butter softened
  • 2 eggs
  • zest from half a lemon
  • 1 Tbsp lemon juice

Glaze:

  • ½ cup powdered sugar
  • 1 Tbsp lemon juice

Instructions
 

  • Preheat oven to 350 degrees.
  • In a bowl, whisk together flour, sugar, and salt. Beat in butter until blended.
  • Add in eggs, lemon juice, and lemon zest. Beat until combined.
  • Spread batter into a greased 9 x 9 inch pan.
  • Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool and then spread with glaze.
  • To make glaze, combine powdered sugar and juice together until well blended. Spread over cooled brownies. Makes 9 brownies.
