Right now, I am really craving those cool crisp autumn days that I know so well.  We aren’t quite to fall weather here yet in Utah.  We are still hanging out in the 80’s.  

I am worried I won’t get to enjoy much fall weather and that we are going to go right from summer to winter with 2 weeks in between that would be called fall.  I guess I will just have to enjoy whatever we get.

Since the weather is so warm, we are still taking advantage of the chance to grill our meals. Today’s recipe is a good one.  The Honey Lime Grilled Chicken soaks in a simple marinade made from 3 ingredients.  

All you need is some bottled Italian dressing, lime juice, and honey! It is simple, easy, and delicious – three requirements that a busy mom loves. Use chicken breasts or chicken tenders.  

I made this tender chicken recipe for a family get together and it got great reviews.  It is one that I will be using often.  This honey lime grilled chicken would also be great served up on top of a salad.

How do I prevent the chicken from sticking to the grill?
Make sure to preheat the grill and lightly oil the grates before adding the chicken. You can also brush the chicken with oil before grilling to help prevent sticking.

How do I know when the chicken is done cooking?
The chicken is done cooking when it reaches an internal temperature of 165°F (75°C) when tested with a meat thermometer. It should be opaque and no longer pink in the center.

Can I grill the chicken indoors if I don’t have an outdoor grill?
Yes, you can grill the chicken indoors using a grill pan or an electric countertop grill. Just make sure to preheat the grill and lightly oil the grates before cooking the chicken.

Can I bake the honey lime chicken recipe instead of grilling it?
Yes, you can bake the chicken in the oven at 375°F (190°C) for 20-25 minutes or until cooked through. Make sure to brush it with the marinade halfway through baking for extra flavor.

Ingredients
  

  • 1 cup Italian dressing
  • ¼ cup lime juice
  • ½ cup honey
  • 4-5 chicken breasts or 12-15 chicken tenders I used tenders

Instructions
 

  • In a gallon side freezer bag, add the Italian dressing, lime juice, and honey. Whisk to combine and then add the chicken.
  • Place in the fridge and allow to marinate for 5-8 hours.
  • Preheat grill to medium. Remove chicken from marinade and place on the grill. Grill until fully cooked, about 6-7 minutes per side for breasts and 2-3 minutes per side for tenders. Be careful not to over cook or you will get dry chicken. Serves 4-5 people.
