King Ranch Chicken Casserole and Pam Review/Giveaway

I was recently asked to try the New and Improved PAM® formula. I use PAM all the time and wondered how the new formula would compare.

I made a King Ranch Chicken Casserole. It consists of layers of corn tortillas, creamy chicken mixture, and cheese (the ultimate baked on culprit). Armed with the new PAM, I went into battle.

The casserole itself was a family pleaser, and the new PAM left me a winner with hardly any clean up. There was no need for soaking or scrubbing. There was no casserole left sticking to the pan. King Ranch Chicken Casserole
Ingredients
  • PAM Original No-Stick Cooking Spray
  • 1 (10 3/4 oz) can condensed cream of chicken soup
  • 1 (10 3/4 oz) can condensed cream of mushroom soup
  • 1 (10 oz) can Ro*Tel Original diced tomatoes and green chilies (Next time I will use mild, the original was too hot for my youngest kiddos)
  • 2 cups diced cooked chicken
  • 1/4 cup diced green onion plus extra for garnish if desired
  • 12 (6-inch) corn tortillas
  • 2 cups shredded cheddar cheese
Instructions
  1. Preheat oven to 325 degrees
  2. Spray a 9 x 13 inch baking dish with PAM No-Stick cooking spray and set aside.
  3. In a large bowl, combine the soups and Ro*Tel. Stir until well blended.
  4. Add chicken and green onion to the mixture and stir until well combined.
  5. Take half of the tortillas and tear into bite sized pieces and place in the bottom of the prepared baking dish.
  6. Place about 2 cups of the chicken mixture evenly over the tortillas pieces followed by 3/4 cup of the shredded cheese.Repeat layer two more times.
  7. Bake at 325 for 40 minutes or until hot and bubbly.

    I will not bake anything without PAM SPRAY!! I especially love it on my pan of brownies and when I make meatloaf. Makes for such an easy cleanup for my other half(since I cooked)hehe.

    My favorite recipe to make is lasagna but after looking at your recipe I remember how much I always enjoyed it. I didn’t enjoy the clean up but now that Pam is even better I’m going to have to try it again.

    I use Pam a lot for all my baking/cooking. My favorite dish to make with PAM is Ham, onion & Mushroom Omelets. It tastes good and I can flip it easily without breaking it and not sticking to the pan.

    I love making Chef Boyardee Pizza kits and it is IMPOSSIBLE to do without Pam! LOL I use it to grease my pizza pans as well as my hands to spread the dough!!

    All I know is I get so frustrated when I run out of PAM because I know my recipes will stick to the pan and not turn out how I would like them to. My favorite recipe to use PAM for is a delicious sausage, egg, breakfast casserole! Yum!
