Creamy Cool Corn Dip

Today is my last Super Bowl recipe.  It is a really quick and easy recipe that you can add to your menu last minute.  I saw a similar recipe and thought it sounded familiar to the recipe I shared for Frito Salad but in dip form.  So I took the idea and created this recipe.  I love it with Frito scoops, but it can be served with any corn chip.  To simplify the recipe I used mexi corn, however if you want to use regular canned corn then just add some fresh diced pepper to it.

Creamy Cool Corn Dip

  • 3 (11 oz.) cans of mexi or fiesta corn, drained (The kind that has peppers added to it)
  • 3 green onions, diced
  • 1/3 cup light mayonnaise
  • 1/3 cup light sour cream
  • 1 Tbsp lime juice
  • 1 tsp garlic salt
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 tsp sugar
  • Frito scoops or other corn chips

Combine all ingredients together in a large bowl and refrigerate for at least 1 hour.  Serve with Frito scoops.

    I made this on Superbowl Sunday and it was so good! I used fresh corn off the cob since I had it on hand, and I sauteed the corn with cayenne pepper, chili powder, and a clove of garlic and let it cool before proceeding with the rest of the recipe. YUM.

    We love the Chili Cheese Frito Salad! I use Mexi-Corn and substitute ranch dressing instead of mayo.

    This definitely looks different. Hubby loves corn so it should be good.
