After baking those amazing apple dumplings, I found myself with a little Mountain Dew left over and stumbled upon a recipe for Mountain Dew Cake on a blog called Patti’s Pantry. I was finally getting around to blogging about this wonderful creation and figured it was worth a try.
The recipe reminded me of a couple of my go-to bundt cake recipes that also use cake mix and pudding mix. The biggest difference is that my usual recipes call for sour cream, while this one uses Mountain Dew, which gives it a wonderful, unique citrus flavor that feels perfect for the season. The cake was an instant hit with my family. It came out incredibly moist and absolutely delicious, with a bright lemon flavor. It was fantastic on its own, but I think a simple powdered sugar citrus glaze would make it even better. Next time I make it, I’ll be sure to add that final touch. - LEMON CAKE MIX
- LEMON INSTANT PUDDING MIX
- MOUNTAIN DEW SODA
- VEGETABLE OIL
- LARGE EGGS
- LEMON JUICE
- MILK
- POWDERED SUGAR
Instructions for Mountain Dew Cake Recipe
First, get your oven ready by preheating it to 325°F. While it’s heating up, prepare your bundt pan by lightly greasing and flouring it to ensure the cake comes out perfectly.
In a large bowl, combine the cake mix and pudding mix. Next, pour in the soda, oil, and eggs. Using an electric mixer, beat the batter at medium speed until it’s smooth and well-blended.
Pour the batter into your prepared bundt pan. Bake it for 45 to 50 minutes, or until a wooden pick inserted into the center of the cake comes out clean.
Once it’s done, let the cake cool in the pan for 10 minutes. Then, carefully turn it out onto a wire rack to let it cool completely. For the final touch, whisk all of the icing ingredients together in a small bowl until the mixture is smooth and pourable. Drizzle the glaze generously over the completely cooled cake, letting it cascade down the sides for a beautiful finish.
Frequently Asked Questions
Can I use a different soda?
Yes, you can experiment with other sodas, but the citrus flavor of the Mountain Dew is what gives the cake its unique taste. Lemon-lime sodas like Sprite or 7 Up would be excellent substitutes and would still provide a similar citrus tang.
Do I have to use a bundt pan?
A bundt pan gives the cake its classic shape, but you can also use a 9×13-inch pan. If using a different pan size, be sure to keep an eye on the cake during baking, as the time may vary.
Why does this recipe use soda?
