Santa Fe Lime Rice

I recently have been on the hunt for a couple of good yet simple Mexican rice recipes.  I’ve been looking for a good regular Mexican rice for a while. Recently, I wanted to also find a cilantro lime recipe.  I found this simple Santa Fe lime rice recipe from a cookbook called The Food Nanny Rescues Dinner by Liz Edmunds. I have shared a recipe previously from the Food Nanny.  It was the tuna noodle casserole

Anyway I loved the fact that with this Santa Fe lime rice recipe you put all the ingredients together and let the rice cook.  No extra steps.  I also liked that you could also do it in a rice cooker.  I love to use my rice cooker.  So either way, you can make this on the stove top or in a rice cooker.  I did the rice cooker method.  We loved this rice.  SO tasty.

It was just the right amount of flavor to it. It is not over powering and not under flavored where it tasted like regular rice.  I also love just throwing all the ingredients in the rice cooker, turning it on, and leaving it to cook.  Such a simple side dish to any Mexican meal.  I do think next time I may try to add a clove of garlic to it. Also, I may try to raise the cumin to 1/2 tsp and see how it works.

Santa Fe Lime Rice

Ingredients
  

  • 1 cup uncooked long grain white rice of calrose rice I used calrose
  • 2 cups chicken broth
  • ¼ tsp. salt
  • 1 Tbsp. lime juice
  • 2 Tbsp butter
  • ¼ tsp. cumin

Instructions
 

  • For rice cooker, combine all ingredients in the rice cooker, Cover and turn on.  It's that simple.
  • For the stove top, combine the rice, broth, and salt in a large saucepan and cook over medium high heat.  Bring to a boil.
  • Decrease the heat to a simmer and add the remaining ingredients.  Stir, cover, and simmer for 15 to 20 minutes, until the rice is tender.
