Peaches and Cream Puffs

Here is another recipe I made to use up those fresh peaches. I adapted this recipe from one that I saw Alyse Christensen share on Studio 5 (a local television show). Alyse is the author of the book “The Gathering of Friends”. I pretty much love anything that involves puff pastry and this was no exception. The flaky puff pastry went well with the sweet cream cheese mixture, whipped cream and the slight tartness from the peaches. Loved it! Plus, it’s fairly simple to put together but also looks impressive.

I am also submitting this recipe to 5 Star Foodie for the “5 Star Makeover” event series. She is asking for creations involving peaches and cream. Check out what she created and learn how to submit your recipe by clicking on the link I provided.

Peaches and Cream Puffs

1 sheet of frozen puff pastry
6 ripe peaches, peeled and sliced (If you want your peaches more sweet, you can mix them with a little granulated sugar, but I just did them without)
8 oz of cream cheese (I used reduced fat)
7 oz sweetened condensed milk (That’s half a 14 oz can)
1 pint heavy whipping cream
1/2 cup powdered sugar
dash of vanilla extract

Thaw puff pastry according to package directions. Cut sheet of thawed puff pastry into 9 squares and bake on a lightly greased baking sheet at 400 degrees for 15 minutes, placing them 1 inch apart on sheet. Allow pastry to cool. In a bowl, beat together cream cheese and sweetened condensed milk together until smooth. In another bowl, whip together whipping cream, powdered sugar, and vanilla until stiff. To assemble puffs; Cut each square of puff pastry in half with a knife, fill the bottom of the puff with the cream cheese mixture followed by peach slices. Then top peaches with whipped cream and place puff top on top of cream. Lightly dust top of the puff with powdered sugar and enjoy!

This recipe was a great inspiration for last night's dessert! I changed it up slightly since I didn't have any cream cheese or sweetened condensed milk on hand.
I simply whipped up the cream with a little sweetener, vanilla and cinnamon.
But it was a HIT with everyone. Thank goodness there's none left today. I'd have a hard time resisting them.
    Thanks for the great idea!

What a great take on peaches and cream. In San Diego our peach season is over, but I will definitely be making this next summer when our peaches are in.
