S’mores Brownies

I was hoping to be able to share some exciting news with you today. Unfortunately, I can’t share it yet. Hopefully tomorrow I can let you in on this exciting thing.

Today’s recipe is S mores Brownies. I got it from Alisa Bangerter during a channel 5 noon news segment in May of 1997. It’s a great way to has the taste of s’mores in brownie form. It’s great to serve anytime, plus they are simple to make thanks to a brownie mix. Or course, you can always make homemade brownies in place of the box mix, but I love the convenience of the box mix.


S’mores Brownies

8-10 graham crackers
1 box fudge brownie mix
3 cups miniature marshmallows
2/3 cup chopped peanuts (this is optional, I use cashews)
1 cup semi-sweet or milk chocolate chips (I’m a semi-sweet gal)

Place graham crackers in a single layer on the bottom of a greased 9×13 pan (I line my pan with foil to easy remove the brownies and cut them into squares). A couple of the graham crackers will need to be cut to fit and cover the bottom of the pan. Prepare brownie mix according to package directions (I always follow the instructions for cake like), then pour the batter over the graham crackers. Bake at 350 degrees for 25-30 minutes until a toothpick comes out clean. Remove the pan from the oven and top with the marshmallows and chocolate chips. Return the pan to the oven for 3 more minutes. Remove from oven and sprinkle with nuts inf desired. Cool before cutting into squares.

    I made these last night — so yummy! I used a combination of vanilla chips, peanut butter chips, and semi-sweet chocolate chips along with chopped peanuts. I didn’t bother greasing the bottom of the foil which was a mistake, but we were able to peel them off after they were cut. =) Thanks for another great recipe!

    These are awesome! What a great idea. I tweaked the recipe a little bit. I used a large round mold (brand-demarle at home. I put graham crackers on the bottome, and then the brownie mix, and baked for 30 minutes. Then I topped it with small marshmellows, white chocolate chips and milk chocolate chips and back in the oven until melted. I removed it from the oven, and put another layer of graham crackers. I waited until it was cool, and flipped it over onto a serving dish-courtesy of the non-stick mold. It was so good and the second layer of crackers evened out the amount of chocolate in the recipe. Thanks so much for this recipe!!!

    Usually when people (women) leaving me "hanging" like this with exciting news, they're pregnant!! LOL!! I'll be sure to "stay tuned", but in the meantime I'll eat the brownies! :)
