Egg Cups

Here is a nice way to present bacon and eggs for breakfast. I found this recipe at Just Eat Food. This turns out like a hard boiled egg wrapped in bacon. Next time I’m going to get thin slices of bacon. That way the bacon will cook faster and I’ll be able to get a consistency of more like a soft boiled egg. I love soft boiled eggs. This was a fun way to have bacon and eggs, plus it was simple to make.

Egg Cups (serves 2)
4 eggs
4 strips pastured bacon
Preheat oven to 350°. Line muffin tin holes with one strip of bacon, securing it to the sides. Do not line the bottom. Break egg over hole and add one egg to each bacon ring.
Bake for about 25+ minutes depending on how well done you like your bacon.

I'm planning to make this for breakfast tomorrow. I think I'll try to shoot it, but I don't think it will be as pretty as your picture!

That looks interesting. Probably smells good. And it would require a great cup of coffee with it.

It looks delicious! I’ve done baked eggs before, but without the bacon wrapped around it. Yum!!!
