Caramel Corn Pops


This would be a great addition to any super bowl party. Who isn’t a fan of caramel popcorn? I definitely am.

This is a fun recipe because it uses corn pops. No, not the cereal, these babies are found on the potato chip aisle. Barrel O’ Fun happens to be the brand that I get here in Utah. I like this caramel coating for this because it stays soft, chewy, and gooey. The bag of corn pops usually has a recipe on it but it’s more of a crunchy coating.

You can also use corn pops or kettle pops. I’ve prefer the kettle pops, but sometimes they can be hard to find. I think they work good because they have a coating already on them so as this gooey caramel sits on the kettle pops they don’t get completely soggy. That way if you don’t eat it all the day you make it, it won’t turn into a gooey, soggy mess. One advantage to the corn pops/ kettle pops instead of regular popcorn is you don’t kernels stuck in you teeth!

Caramel Corn Pops
 
Ingredients
  • ¼ cup butter
  • 1 cup brown sugar
  • ¾ cup light corn syrup
  • ½ tsp vanilla
  • 1 Tbsp water
  • ¼ teaspoon baking soda
  • 1 (15-18 oz) bag Corn Curls (pops) or Kettle Pops (look in the Potato Chip/Popcorn section of your store)
Instructions
  1. In a large saucepan, bring butter, brown sugar, corn syrup, vanilla and water to a medium boil. Stir continuously. Boil for 1 to 1 ½ minutes. Remove from heat.
  2. Mix baking soda, be careful, coating will puff up. Pour over corn pops or kettle pops; toss until evenly coated. Enjoy!
