Caramel Corn Pops

This would be a great addition to any super bowl party. Who isn’t a fan of caramel popcorn? I definitely am. This is a fun recipe because it uses corn pops. No, not the cereal, these babies are found on the potato chip aisle. Barrel O’ Fun happens to be the brand that I get here in Utah. I like the coating for this because it stays soft, chewy, and gooey. The bag of corn pops usually has a recipe on it but it’s more of a crunchy coating. You can also use corn pops or kettle pops. I’ve always used the kettle pops. I think they work good because they have a coating already on them so as this gooey caramel sits on the kettle pops they don’t get completely soggy. That way if you don’t eat it all the day you make it, it won’t turn into a gooey, soggy mess. One advantage to the corn pops/ kettle pops is you don’t kernels stuck in you teeth.

Caramel Corn Pops

1 (18 oz.) bag Corn Curls (pops) or Kettle Pops (look in the Potato Chip/Popcorn section of your store)
1 cup brown sugar
1/2 square butter (1/4 cup)
1/2 tsp. vanilla
3/4 cup of light corn syrup
1 Tbsp. water
1/4 teaspoon baking soda

Bring butter, brown sugar, corn syrup, vanilla and water to a medium boil. Stir continuously. Boil for 1 to 1 ½ minutes. Remove from heat. Add baking soda, coating will puff up. Pour over corn pops or kettle pops; toss. Enjoy!
