Roasted Red Onion Mayo


I love the flavor of onion. It goes well with so many things. I especially love it on burgers and sandwiches, but I don’t like it when it’s raw.

This recipe is the perfect way to get that onion flavor on you burgers and sandwiches with out having to have it raw. Plus, it is super simple to make!

All you need is 3 ingredients plus some salt and pepper (I always count these as free ingredients and never include them in my ingredient count). You obviously need a red onion. It gets finely diced and tossed with olive oil, salt, and pepper. It then get’s roasted in the oven. This really helps develop an awesome flavor from the onion and brings out the sweetness from the red onion.

Now really, you could do a bunch of roasted onion and keep measure amounts of it in the freezer for whenever you want to make this mayo. You can also keep some onion in a container in the fridge for a month and add it to mayo as needed. The actual mayo itself will keep for up to 2 weeks in the fridge.

Roasted Red Onion Mayo
 
Ingredients
  • ½ large red onion, chopped
  • 1 Tbsp olive oil
  • salt and pepper
  • ½ cup mayonnaise
Instructions
  1. Preheat oven to 425 degrees.
  2. Place onion on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Bake at 425 for 10 minutes. Allow to cool.
  4. Add 3 Tbsp of the onion to ½ cup of mayo. Use immediately or store in the fridge for up to 2 weeks.
