Strawberries happen to be the favorite way to top waffles at our house. A lot of the time, we use fresh strawberry slices with maple syrup.
Well, recently I decided to try a recipe for strawberry syrup. This is a cooked syrup that uses fresh strawberries. I have shared a strawberry sauce recipe before but this recipe is different. It is cooked longer and is definitely a syrup consistency unlike the strawberry sauce.
- 3 cups fresh strawberries, diced
- 1 cup sugar
- 2 Tbsp lemon juice
- ¼ tsp vanilla
- Combine all of the ingredients together in a sauce pan. Cook over a low heat bringing to a simmer.
- Simmer until strawberries are soft and mixture has thickened to you desired consistency up to 15 minutes.
- Syrup will thicken more upon standing. If it ends up too thick, just mix in a little water to reach desired consistency. Makes 2½ cups of syrup.
