I’m back with recipe for you all today! This one was well worth the wait.
I love waffles and have my fair share of waffle recipes. However, I was missing a sourdough recipe. That was until now.
This recipe does not require you to have a starter. You make the sourdough portion of the recipe overnight and then basically just add in the eggs. It really is quite simple to do. Plus, I love that some of the work is done ahead of time, the night before.
The waffle itself has a nice crispy outside with a soft and chewy inside. It was amazing topped with buttermilk syrup, fresh strawberry slices, and whipped cream. It also was pretty tasty with good old butter and syrup but the afore mentioned combination with the fresh strawberries was divine!
Just a side note, I did prepare the waffles in my rotating Belgian waffle maker.
- ½ tsp instant yeast
- 2 cups flour
- 1 Tbsp sugar
- ½ tsp salt
- 2 cups milk
- ½ cup melted butter
- ½ tsp vanilla
- 2 eggs, separated
- vegetable oil or cooking spray (if needed for the waffle maker)
- The night before, add the yeast, flour, sugar, and salt to a large bowl. Whisk together.
- Then one at a time, add in the milk, butter, and vanilla -mixing to combine after each ingredient.
- Cover the bowl with plastic wrap and allow to sit out at room temperature overnight.
- In the morning preheat your waffle maker.
- While the waffle maker heats, add the yolks of the eggs to the batter that sat out overnight. Stir to combine.
- In another bowl, beat the egg whites until soft peaks form, the gently fold into the batter.
- Prepare waffles according to your waffle maker's manufacturers instructions. Makes about 4-5 waffles using 1 cup of batter per waffle.
