Valentine’s day is a week away and I have a few fun recipe that would be perfect for the day that I will be sharing this week.
First up is a simple strawberry vinaigrette recipe. This is a copy cat version of the one served at one of my favorite restaurants, Cafe Zupas.
The pink color makes it festive and you can get creative with the salad you make to go with it. I love a spinach salad that includes, strawberry slices, dried cranberries, goat cheese, and pistachios.
- 6 good sized strawberries
- ¾ cup red wine vinegar
- ½ tsp salt
- ½ cup sugar
- 1 cup canola oil
- Cut the green tops off the strawberries and place them in a blender along with the vinegar, salt, and sugar. Blend until smooth.
- Open the small opening in the lid of your blend. While blending, slow pour in the oil.
