Funfetti Waffles


Over the past few years, I have seen the idea of a funfetti version of breakfast to serve on days worthy of a celebration like a birthday or the first day of school.

I finally decided to make a funfetti version myself. I have seen a cake batter funfetti version, but didn’t want to go that extreme as far as a sweetness level. So I took one of my favorite waffle recipe and created my own version. It was just what I was wanting, a delicious waffle with funfetti sprinkle incorporated into the batter.

Now you can serve these babies with just butter and maple syrup on top, but I wanted to make then a little more celebratory worthy. So I topped them with strawberry slices and whipped cream followed by an additional sprinkling of sprinkles.

Now my family then finished off their waffle with maple syrup. I thought the maple syrup just wasn’t the right flavor combination so I used chocolate syrup on mine. I’m not usually a fan of chocolate syrup, I tend to be more of a hot fudge gal, but let me tell you – I think it was the perfect flavor addition to finish the waffle off. Go for the chocolate syrup, it’s the perfect way to finish off this celebratory worthy waffle!

Funfetti Waffles
 
Ingredients
  • 1½ cups flour
  • 1½ tsp baking powder
  • pinch of salt
  • ¼ sugar
  • 1½ cups milk
  • 2 eggs
  • 1 tsp vanilla
  • 3 Tbsp canola oil
  • ¼ cup rainbow sprinkles plus additional for garnish
  • maple or chocolate syrup, slice strawberries, and whipped cream for serving
Instructions
  1. In a bowl, whisk together the flour baking powder, salt and sugar.
  2. In another bowl, whisk together the milk, eggs, vanilla, and oil.
  3. Add the flour mixture to the egg mixture and whisk together just until combined. Then fold in the sprinkles.
  4. Cook batter according to your waffle maker instructions. I use ½ batter for my regular waffle iron and 1 cup for my Belgian waffle maker. Makes 6 regular waffles or 3 Belgian waffles.
