Sweet and Spicy Grilled Chicken

Today I’ve got a quick and easy spice rub for chicken.  It is sweet, spicy, and oh so delicious.  However, don’t be scared off by the term “spicy”.  It’s not hot spicy, it’s flavor spicy.  I pulled this from my recent Simple and Delicious magazine.  This is a recipe you can quickly mix up and toss on your grill any night.  Loved it.  So yummy and flavorful.  This chicken would also be wonderful as part of a salad.  I think a salad made with black beans, cheese, tomato, tortilla strips, this chicken, and a dressing made by mixing salsa with ranch dressing would be fabulous!

Sweet and Spicy Chicken

  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 2 teaspoons onion powder
  • 1-1/2 teaspoons salt
  • 1 teaspoon chili powder
  • 5 boneless skinless chicken breast halves (6 ounces each)

Combine the first five ingredients; rub over chicken. Coat grill rack with cooking spray for grills or brush with olive oil before starting the grill. Grill chicken, covered,  for 4-5 minutes on each side or until a meat thermometer reads 170°. Yield: 5 servings.

    I use a rub similar to this one (minus the onion pwd) that I use on spareribs. It never would have occurred to me to try it on chicken. Looks delicious!

    I’ve tried something similar, but wrapped the chicken in bacon first before dredging it in the brown sugar-chili powder mixture. Not as healthy, but you know everything’s better with bacon! ahahahahaha
