English Muffin Breakfast Pizzas

More breakfast goodness coming for you today, and this one only takes 5 ingredients to make! This is a recipe for a simple English muffin breakfast pizzas. English muffins are a favorite for this carboholic! I love the flavor and texture of them. They are even better as a base for these pizzas.
The main trick to making these easy breakfast pizzas is to undercook the eggs. You want them to still be wet before you place them on the muffins. Then, you can put them right in the oven or freeze them. Or make a double batch and freeze one batch to eat later. That is how I like to cook: cook once, eat twice.

These mini breakfast pizzas were delicious, and we didn’t even eat them for breakfast; instead, we had breakfast for dinner! No matter when you eat them, your kids will love them. However, this would be excellent to have in the freezer for school days.

- BUTTER
- EGGS
- HAM
- CHEDDAR CHEESE

Instructions for English Muffin Breakfast Pizzas
Prep the Oven (if serving fresh) – Preheat your oven to 350°F. If you’re freezing these for later, you can skip this step for now.
Toast the Muffins – Lightly toast the English muffins—just enough to give them a bit of structure. A low toaster setting works great. Spread each half with a little butter while warm.
Scramble the Eggs – In a skillet over medium heat, scramble the eggs until they’re just shy of fully set—you want them slightly wet so they finish cooking in the oven. Season with salt and pepper to taste.
Add the Ham – Stir in the cooked ham and mix gently to combine.
Assemble the Pizzas – Spoon the egg and ham mixture onto each of the buttered English muffin halves, then sprinkle generously with shredded cheese.
Freeze or Bake
- To freeze: Wrap each assembled muffin tightly in plastic wrap, then place them in a gallon-sized freezer bag.
- To bake fresh: Arrange on a baking pan and bake at 350°F for about 10 minutes, until the cheese is melted and bubbly.
- To bake from frozen: Unwrap and place on a baking sheet. Bake at 350°F for 15–18 minutes, or until heated through.
Garnish & Serve – Top with diced green onions if desired and serve warm. Makes 6 breakfast pizzas.

How long do they last in the freezer?
They’ll stay fresh for up to 2 months if wrapped tightly and stored in a freezer-safe bag.
Can I reheat them in the microwave?
You can, but the texture is best when reheated in the oven. If using a microwave, wrap in a paper towel and heat in 30-second intervals until warmed through.
What kind of cheese works best?
Cheddar is classic, but Monterey Jack, mozzarella, or a blend also works well. For a little kick, try pepper jack!
Can I prep the egg mixture ahead of time?
Yes—scramble the eggs and mix in the ham, then store in an airtight container in the fridge for up to 2 days before assembling.

- 3 English muffins split
- 4 Tbsp butter
- 6 eggs beaten
- 1 cup diced ham **
- 1 cup cheddar cheese
- diced green onion optional for garnish
Instructions
- Preheat oven to 350 degrees (if eating them right then, no need for this if you are freezing them).
- Lightly toast English muffins and spread with butter. (I just toast them on the lowest setting on my toaster).
- In a skillet, scramble eggs until almost set. You want them to still be wet. Season with salt and pepper. Mix in the cooked ham. Then top each of the muffins with some of the egg mixture followed by some of the cheese. (if making them ahead of time, this is the point where you would wrap them with plastic wrap, them place in a gallon sized freezer bag and freeze)
- If fresh, place on a baking sheet and cook at 350 degrees for 10 minutes. If frozen, unwrap and place on a baking sheet and cook at 350 degrees for 15 or so minutes until heated.
- Top with diced green onion if desired to serve. Makes 6 pizzas.
