Chocolate Swirl Muffin Cake

Yesterday I shared a sausage and potato bake you could make for Mother’s Day or any other day.  Here is the perfect accompaniment.  A Chocolate Swirl Muffin Cake.  I found the recipe over at the Mixing Bowl.  It is a fun way to dress up a Betty Crocker chocolate chip muffin mix.  I had some on my shelf that needed to be used and this was perfect.

It is definitely for the chocolate lover.  You could forgo the filling/glaze to make it less chocolaty if you still want the cake shape without the heavy chocolate flavor.  This really could even qualify as a dessert and not a muffin due to the high chocolate content.  I have also discovered the secret to getting your bundt cake to come out of the pan perfect every time is to use the Pam spray for “Baking”.  Use the spray to grease the pan, give the cake 10 minutes to cool before inverting, and the cake comes out perfectly every time!

Chocolate Swirl Muffin Cake

Filling/Topping:

1 cup semisweet chocolate chips
3/4 cup whipping cream
1 tsp vanilla

Cake:

2 boxes (16.4 oz each) Betty Crocker chocolate chip premium muffin mix
1 1/3 cups water
1/2 cup vegetable oil
4 eggs

1. Heat oven to 375. Generously grease 12-cup fluted tube cake pan.

2. In 2-quart saucepan, cook all filling ingredients over medium-low heat 2 to 3 min, stirring constantly, until smooth. Remove 1/3 cup filling for glaze; set aside. Freeze remaining filling 15 min until thick like pudding.

3. Meanwhile, in large bowl, stir together all cake ingredients. Spoon half the batter into pan. Remove filling from freezer. Carefully spoon filling in center of batter to within 1/2 inch of pan edges. Spoon remaining batter over filling.

4. Bake 50 to 65 min or until top springs back when touched. Cool 15 min. Remove from pan to wire rack. Spoon reserved 1/3 cup filling on cake to glaze. (If too thick, microwave filling on high 10 to 15 seconds). Cool completely, about 1 hour.

(in my oven this was done at 50 min.)

    My cute husband doesn’t cook, bless his heart. Two years ago he wanted to make me breakfast in bed. He knows I love french toast. He came into the bedroom carrying a tray with two pieces of toast and a small piece of paper that said, “Oui, oui”.

    My favorite was last year’s gift. My husband designed and planned out a potting bench. He was working late into the night before Mother’s Day and surprised me the next morning. It was beautiful!

    My favorite Mother’s Day gift is a poem my husband wrote for me. I also enjoy a delicious breakfast of french toast and fruit (but not in bed). I’m too much of a clean freak too risk crumbs in my bed.

    My favorite thing to do on Mother’s Day is to, well, do my favorite MOM things with my 4 boys! I LOVE being a mom, so I celebrate with them by doing all of the things that make it fun to be a mom – playing board games, making treats, eating dinner together as a family, tucking them into bed, – all good things that I know I will miss as they grow up and move away from their Mom! With 3 teenage boys, that sad day is not too far away, so I am soaking up as much Mom time as I can get.

    My husband and kids make a shadow box for me every year for Mother’s Day! Even though I know it is coming, I anticipate it more and more every year! It always has such neat pictures and artifacts from throughout the year. Things my husband kept, like show tickets or seashells, that I didn’t even realize he had kept them!

    My husband got me 3 tiny rings made out of white gold that has each of my children’s birthstones on them, they hang from a necklace. It’s my favorite jewelry to wear. I like meaningful gifts like this ;)

    Last year, my siblings all coordinated and took black & white photos of our families holding letters to spell out the word “FOREVER.” We had it custom-framed for my mom, and she loved it!

    My favorite mother’s day gift is from my husband and my little girl. I was pregnant with our second child and I love gardening. I was so sick and had not got much gardening done that spring. So…while I was out, my husband and my daughter surprised me and planted some petunias all around our yard and in some pots for me. Best of all they made a family stepping stone and placed it in our main flower bed.

    My favorite gift I got years ago. My kids were little and my hubby took them to one of the pottery stores and they painted me a bowl and a mug, with handprints. They are teenagers now and it is still my favorite mug to use.

    The best gift I got from my kids were homemade coupon books. I got to use some coupons for back scratches, foot rubs, painted fingernails, chores, etc. However…the kids thought all the work they did for each coupon was hard and kind of a pain. I was still trying to collect on some later in the fall that year, but all their excitement was gone. So now I have the remains of my favorite gift from them. But what I got to use was fabulous. They have stuck to flowers and gift cards ever since.

    A few years back my mom was watching my kids for me while my husband and I went to dinner for mothers day. When I got back to pick them up, my mom and had had my kids all color me a picture and she had gotten a few decorative frames and had put a picture from each one of my kids in them. I proudly display them on the top of my piano to this day! It made me feel so loved

    I’m still a fairly “new” mom, so my experience is limited. I’ve got a set of twin boys that are two and now a 4 mo. old baby girl. I loved getting a gift certificate to get a massage from my husband. He knows how to pamper me! ;)

    My 5th child (I have 6), a son, was born on Mother’s Day almost 14 years ago.
    That was the best gift I’ve received on that special day by far. However, this is a two parter comment…

    You see, my husband gave me an apple tree as a gift that year (he gave me a gift with each baby), so now every year on Mother’s Day, my son…. who was born that day…. and I, stand in front of the tree and get our picture taken. It’s fun to look back over the past years to see how tall, my baby boy AND that tree has gotten. That tree was also one of the best gifts I’ve gotten.

    My first year married we didn’t have kids yet but my husband gave me a box of chocolates with a sweet letter telling me what a wonderful mother I will make someday. I am now 8 months pregnant with our first child. SO I guess i can really celebrate mothers day now! ;)

    I gave my mom a “Reverse Baby Book”. You record all of your memories in it that you have about the events of your life that include her. She loved it, and found out a few things she didn’t know that us kids tried to hide for years!!!

    MMM this looks delicious! This is my first year of being a mother and my wonderful husband got me an early present because I have been wanting one since we’ve had our baby, but he got him a jogging stroller!
