My Blogoversary and Brownies for a Crowd

Today is my two year blogoversary.  Can you believe it has been two years?  So since it is my blogoversary we are gonna celebrate!  I want to thank all of you for being so awesome and helping make my blog what it is today.  Since I can’t have an actual party with you all, we are going to have a virtual party that is going to last the whole week.  So if I could have you all over for an actual party I would serve you a great spread of desserts.  Again,  since we have to do this whole party thing virtually you will just have to enjoy pictures with the recipe of the sweets I’d share.  Not quite as good as having the actual treats but pretty darn close.  So all week will be sweet treats.  And what would a party be with out gifts?  So each day this week I will be giving something away.  The thing is you only have the one day to enter for each prize and the prize will change for each day.

So for today’s prize, I have a great prize package from Yoplait and MyBlogSpark.  The  “Simply your Life “prize pack includes a coupon for a free sample of Yoplait’s new Simply… Go-Gurt as well as a pocket Etch a Sketch, weekly planner and a seat back organizer.  All great stuff to help keep the kiddos happy in the car as you travel around to where ever you need to go and help you keep track of all those place you need to be.

I am so excited about Yoplait’s new Simply… Go-Gurt.   It is made from simple ingredients moms look for and contains no high fructose corn syrup or artificial colors or flavors. Each convenient portable yogurt tube contains a good source of calcium and vitamin D. Simply stated, Simply… Go-Gurt is a good-for-you, low fat yogurt snack that you can feel good about giving to your kids.  My kids love Go-Gurt and I am so glad they now have this version that doesn’t have the high fructose corn syrup or artificial colors or flavor.

Now not only am I giving away this gift pack, but the first 30 of you to click on the micro site link right below this text will get a free sample of Simply…Go-Gurt.  After that,  the rest of you can print off a $1.10 off coupon to use to get a package to try.  So actually for today every one of you will get something.  Such a great way to start a party!

You have until tonight at 10 pm MST to enter to win the “Simply You Life” gift pack.  Then I will announce the winner tomorrow and notify them by email.  To enter, I am making it simple.  Just leave a comment on today’s post.

Now for today’s sweet treat.  It’s Brownies for a Crowd.  This recipe comes from a lady that lives in my area and is well known for her brownies, sweet rolls, and dinner rolls.  And lucky for you and me, I have her brownie recipe.  Now the recipe makes a whole sheet pan of brownies, but if you don’t have a crowd to make these for I am sure it would work just fine to half the recipe  and put it in a 9×13 pan.  The other thing that is different about this recipe is you make a normal chocolate frosting but you put it on the brownies while it is still hot and the frosting melts into a nice glaze type topping on these fudgy brownies.  Can you say chocolaty delicious?  YUM!

Brownies for a Crowd

  • 8 eggs
  • 2 tsp. salt
  • 2 cups of butter , melted (yes that is right 2 cups – remember these are for a crowd)
  • 1 1/2 cups Hershey’s cocoa (that is what her recipe says and that is what I used)
  • 4 cups sugar
  • 4 tsp. vanilla
  • 3 cups flour
  1. Beat eggs with a mixer in a large bowl.  Then add sugar, salt, vanilla and beat for 1 minute.
  2. Add melted butter and blend.  In another bowl, mix flour and cocoa with a whisk until well blended,
  3. Add flour mixture to egg mixture and mix until well combined.
  4. Spread onto a greased jelly roll pan (12 x 17) and bake at 350 degrees for 20-25 minutes.  Cool for 15 minutes and spread with frosting.

Frosting

  • 4 cups powdered sugar
  • 1/2 cup butter, softened
  • 1/2 cup cocoa
  • milk

Blend powdered sugar, butter, and cocoa along with enough milk to make the frosting a spreadable consistency.  Spread over the brownies after they had cooled for 15 minutes.  Keep spreading as the frosting melts making it nice and even on the brownies.  Allow brownies to continue to cool.  Makes 30 good sized brownies.

I just took it out of the oven and it is fantastic!! I hope I can keep my husband and grandson out of them so I can make these little things!

I found your site through a google search for a brownie recipe to fit into a 17 x 12 pan. Your’s was the only one that actually HAD the recipe. Thank you so much. Later this week, I would like to share on my blog as I will be making something Halloweenie out of these brownies. Would that be okay with you? I sure hope so! Please let me know. Thanks. I made these and shipped to my Marine son stationed in Afghanistan. I cut into big bars so they wouldn’t dry out, wrapped each bar in wax paper, and sealed in glad storage containers. He just got them yesterday and his whole crew loved them! Im sharing with my Marine families!

I feel for you TJ, My husband is a recently diagnosed type 2 diabetic, and unfortunately was born with a “sweet tooth”, so avoiding things as delectable (& sweet) as these brownies has been really hard on him, so I know how you must feel

I’m diabetic to, but have recently discovered a great sugar replacement that comes from a plant called Steevia. It’s unlike the other artificial ones like Sucralose, Splendor etc., that are actually derived from chemicals. This is about as natural as it gets, and tastes great. It sure kills the sugar cravings for me. It’s a bit tough to find still, but better supermarkets will have it.

I’ve made these a couple of times now. They’re great! Except the last time I made them. For a fireside. And forgot to actually put the 2 cups of butter IN the batter. I couldn’t figure out what was wrong with them–they tasted okay, just different–until I went to make the glaze and opened the microwave…there was the butter! Ha ha. I glazed them anyway and the next morning, the glaze wouldn’t stick to the brownies. Argh! Couldn’t take that to the fireside, so I traded family for some mixes for the fireside and we ended up enjoying the “ruined” batch SO much that evening. They were like fudge and so good with ice cream! :D

also: the glaze stuck fine by that night. ha ha!
