Today, we are flashing back to a recipe that would be perfect to serve for Easter dessert. It all begins with a white cupcake. Now this cupcake starts with a cake mix, but it gets some special ingredients added to it to make it amazing! This is my go to recipe for white cupcakes ever since I found it.
The cupcakes then get topped with a buttercream frosting with a light coconut flavor. Then I like to finish off the cupcakes with some toasted coconut. I love the flavor you get from toasting coconut. However, I do think it would be cute to use regular shredded coconut on them and call them bunny tail cupcakes for Easter! They would also work well to make those Easter basket cupcakes with like these with the coconut colored green for the grass.
