Pink Lemonade and Key Lime Pie Cookie Bars & Giveaway

I have Spring Fever? How about you?  The weather here just keeps teasing me. When it reaches 50 here I am running around with no jacket taking in every ounce of sunshine I can.  I long for the days of capri’s and sandals! I am kind of excited that Easter is early this year.  That means I can start decorating with those bright and beautiful spring colors even if it happens to still look like winter out side most of the time.

Well, Duncan Hines Has released 4 new frosting creation flavors to help us spring into the season.  These flavors will be available March 2013 and include – key lime pie, fruit punch, peaches and creme, and pink lemonade. I was given a speak peek of the flavors and asked to create a recipe with them.  I was pulled in by the key lime pie and the pink lemonade versions.  Those are 2 of my favorite Spring/Summer flavors. I settled on making some cookie bars with those 2 flavors in mind and what I came up with is the recipe below.

Both were delicious, but I do have to admit the Coconut Key Lime Pie version was my favorite.  I used the Duncan Hines supreme coconut cake mix to make that one.  If you can’t get the coconut cake mix, just use the white cake mix like I did in the pink lemonade version and use coconut extract in place of the lemon extract. I elected not to use the lemon cake mix for the pink lemonade cookie bars in order to get a lighter lemon flavor.  However, you could always use that if you would like to. Just don’t use the lemon extract and you can probably leave out the lemon zest too.

The key lime version would be perfect to serve up for St. Patty’s Day and both versions would be a perfect way to end your Easter dinner. Did I tell you how much I have Spring Fever!

Pink Lemonade and Key Lime Pie Cookie Bars
 

Ingredients

Instructions
  1. Preheat oven to 350 degrees.
  2. Grease or line a 9 x 13 pan with aluminum foil.
  3. In a large bowl, combine the cake mix, eggs, oil, and zest (plus extract for pink lemonade version) until well combined.
  4. Press dough evenly into the prepared 9 x 13 pan.
  5. Bake at 350 degrees for about 18 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.
  6. Pour packet of flavor mix into the can of Duncan Hines frosting creations frosting starter.
  7. Spread or pipe the frosting over the cooled bars. Cut into bars and sprinkle with sprinkles or toasted coconut if desired. Makes 18-24 bars.

Notes
A white cake mix along with ½ tsp coconut extract can be used in place of the coconut cake mix.
