Open House Waffles

It’s holiday breakfast week at RMK and today we’re makin’ waffles!  I love breakfast and I love waffles!  The great thing about this recipe is it begins with baking mix and does not require you to separate the eggs and whip the whites.  Not only are they easy to make but they are delicious!  I always love to top waffles with fresh fruit and whipped cream.  However, when we had these I served them with some yummy red raspberry syrup I found at Costco.  A waffle bar would be a fun way to serve these up forChristmas breakfast.  Have a variety of ways to top your waffles available.  Here are some recipes you can top these babies with:

Open House Waffles
  • 3 cups baking mix (like Bisquick)
  • 1 cup flour
  • ⅛ tsp baking soda
  • ¼ cup canola oil
  • 3 eggs, beaten
  • 3 cups buttermilk
  • 2 Tbsp water
  1. In a bowl, whisk together baking mix, flour and baking soda.
  2. Add oil, eggs, buttermilk, and water to the flour mixture and mix well.
  3. Scoop batter a heated waffle iron and cook according to manufacturer's directions. (I used my regular Belgian waffle maker and it takes ½ cup batter per waffles. I was able to make 16 waffles)
