Easy Breaded Chicken

Years ago I learned to bread chicken from my husbands boss at work.  I know it’s weird, but that is where I learned the basics.  He had once worked in a kitchen at a country club and shared his knowledge with us when my husband and I were newly married.  Over the years now, I have developed my own simple recipe for breaded chicken and figured I’d share it with you today.  There aren’t really any exact measurements, but it is simple and you really can’t mess it up.  I like to use a combination of  Italian bread crumbs with panko bread crumbs.  I like to use the Italian bread crumbs because it already has the seasoning in it.  If you only have regular bread crumbs, then just mix in some Italian seasoning.  This method will also work with pork chops too.

Easy Breaded Chicken

This will bread around 5 chicken breasts

You need to have 3 dishes to complete the whole breading process.

1. a dish with flour

2. a dish with eggs that have been beaten (I use 2 eggs)

3. a dish with your breading mixture (I use equal amounts of panko bread crumbs and Italian bread crumbs approximately 3/4 cup of each.  Then add in a good amount of salt along with some pepper. Mix well.)

To bread the chicken:

Start by coating it with flour.  Then dip it in the egg mixture, followed by the bread crumb mixture.  Then cook in a skillet coated with oil until both sides are nice and brown and the juices run clear.

    Thanks so much for this. This might sound weird, but I spent the first couple of years of my life in Rome, then travelled around the globe. Now I’m living in Australia, with my Chinese wife, and son we had whilst in Japan! Truly internationalized, eh? Anyway, I’ve been trying to rediscover the smells and tastes of my youth with some authentic Italian recipes like these, best I’ve found so far! Thanks again, I’ll see if I can add the feed to my google reader tonight, though my son usually does that for me!

    Adrienne- in my grocery store the panko is near the flour on the baking aisle. Maybe try there!

    Help!! Where have you found the panko bread crumbs? I want to make this but I can not find them anywhere!!

      I have found it in my local grocery stores and chain supermarkets as well usually next to the breadcrumbs and also in the Asian section of the stores.
